Mountain Chicken - Dominica

When traveling to the island of Dominica, we strongly suggest trying their Mountain Chicken…don't let the word chicken fool you, as it's not your normal every day chicken…Mountain Chicken is actually Frog legs. In Dominica it is deep fried and served with ground provisions. Excited yet? You will have to check back on Friday for the details of this island delicacy. Callaloo Soup - Dominica

If going down on some Frog legs is just not your idea of a delicious meal, try the one-pot-meal; Callaloo Soup…a cream based soup made with dasheen leaves simmered in coconut milk and local herbs and spices.

Oil Down - Grenada

If you're like us and get a little too excited when coconut milk is the base of any dish, then you will LOVE!... not Like Grenada's national dish. Oil Down is a versatile one-pot meal…traditionally made on an open flame…It usually includes salted meat, chicken, callaloo, spices and provisions (the local term used for starchy roots, tubers and green bananas). It’s a must try!

Crab & Callaloo Soup - Grenada

Another dish to try while on this small majestic Caribbean Island of Grenada (also known as the ‘spice island’) is Crab & Callaloo Soup. Like the Callaloo Soup in Dominica, this is also very delicious…but with the added crab, you will be in for a real treat. So if you are not allergic to crab…Give it a try!
